What I Ate Wednesday: Food Prep to the Rescue

Yesterday was one of those days that had me so thankful to have food in the fridge, ready to be inhaled. I have a tough exam tonight that I’m not feeling particularly ready for, so the last couple days have been a bit of a blur of studying/whimpering in fear. My low point was probably last night, when I texted a selfie of myself ugly-crying to my mom so that she would shower me in pity. Grown up behaviour.

So needless to say, food was not exactly at the forefront of my mind yesterday. But luckily, I had some stuff prepared from the weekend which made all of my meals really quick and pretty darn tasty. Or at least, a whole lot better than the alternative of grazing on crackers or something all day.

This weekend I tried my hand at creating a wholesome, date-sweetened “brownie” recipe. It’s not QUITE how I want it to be but I’m determined to nail it so I’ll be sure to share if/when I do! In the meantime, I’ve been having noooo trouble polishing off the first trial.

This beloved recipe with brown rice pasta that I made on Sunday. The picture is a bit deceiving because I had at least 5 or 6 other bites straight from the tupperware before deciding to transfer it to a bowl. Sometimes I just need a little warm-up.

The usual afternoon muffin from my freezer-hoarding stash. This came to class with me and was delicious.

 roasted veggies + egg // cheddar // avocado // jam sandwich

I had a big batch of roasted veggies in the fridge, so this meal came together in the time it took to fry an egg. Also, that sandwich combo – sweet, salty and so good! I also had an apple before bed.


Well I better go… a few friends are coming over for a study party. Hopefully the end result isn’t group crying selfies. Yikes.

But on a more positive note, the struggle for this one is going to make being done feel SO euphoric! And while I’m being pretty dramatic about the whole ordeal, I’m keeping in mind this post and reminding myself that at the end of the day, the worst case scenario is a not-so-stellar mark, which really isn’t all that bad in the grand scheme of things.

  1. As a self proclaimed brownie lover, I totally get behind having one at breakfast!
    I hope you do well on your test today. None of my classes this semester have incredibly stressful tests, but I sure have had my fair share. I think organic chem took a piece of me with it when all was said and done!

  2. Breakfast BROWNIE!? Um, yes please! Can’t wait! Food prep is so wonderful for this very reason. When we are busy or have something far more pressing to focus on, the last thing we want to do is try and figure out meals. You were very wise to prep yourself! Your photography is wonderful! Such nice lighting. Makes me want it allll.

  3. Brownies for breakfast sound like my kind of thing! I can’t wait until you master the recipe and share the recipe on your blog :)
    As usual, all the meals look scrumptious! Egg, cheddar, avocado and JAM don’t seem like a likely combination but I’m sure it’s amazing (hey, I have fruit with cheese all the time, and avo + egg are besties). It’s definitely a hard time academically with midterms and finals looming out there but you can handle it! Look at all the nutrients you’re getting to your brain :) GO JACKLYN!

  4. Good luck on your test!!! I’m sure you are going to do an amazing job!!
    We all have our ‘not our best adult moments’. I definitely called my mom while ugly crying on multiple occasions. My most recent bad adulting moment involved me locking myself during a tantrum- hers and mine.
    I can’t wait to hear about that brownie recipe!!

  5. Your eats look so yummy. I love having eggs, toast and veggies – my go-to weeknight nutritious dinner. Hope the exam went well. I definitely thrived on meal prep and easy meals/snacks when I was in grad school. It’s challenging but you’ll get through it!
