I often find myself eating foods that aren’t really “recipe worthy” but that I think people might like to try. Since I wasn’t working yesterday, I snapped away as I ate so that I’d be able to share a few ideas! Many un-pictured morsels found their way to my belly but here are my main meals.
High Protein Pancakes (adapted from this recipe)
– 1/2 cup quick oats
– 2 eggs
– 1/2 a banana, mashed
– 1/4 cup plain greek yogurt
– big pinch of salt
– big pinch of cinnamon
I just stir everything together and fry up four yummy and filling pancakes! Yesterday I topped two with Sunbutter, maple syrup, chia seeds and coconut – I foresee an exact replica very soon. As you can see, our front porch is covered in rose petals right now. How I will miss that backdrop when rose season comes to an end!
Mid-morning I baked some brownies for my book club tonight. I don’t think I have baked a single recipe in my life without licking the bowl and this was no exception. Oh my yum.
When I can, I like arranging my workouts so that I’m hungry for a meal afterwards to refuel. Right before lunch my dad and I did a 20 minute circuit that killed us both. Another reminder that workouts don’t have to be long to be effective.
Fully-Loaded Tuna Salad
This is one of my favourite ways to eat canned tuna. I always go for light skipjack instead of white albacore for the lower mercury content. I went so long without knowing that AND light is cheaper! To a drained can I add:
– Diced Apple
– Chopped Celery
– Chopped walnuts
– Salt and Pepper
I love it served on lettuce leaves and yesterday I paired it with avocado and tomato. I don’t know why I keep saying “I” because my mom did all of this… thanks mama!
Lazy Man’s Baked Beans
We usually cook beans from scratch in the slow-cooker but yesterday it only occurred to my mom and I at about noon. So we popped 3 cans of beans (chickpeas and romano) along with some sweet potato, pineapple and onion into the slow cooker and it worked out really well. This is the sauce we cook it in – we clipped it off a bag of raw navy beans once and have been using it ever since! It’s pretty sugar heavy so it’s no surprise that it’s so good. We had it with steamed broccoli and bread fresh out of the bread maker. I ate quite a bit more after this plate. Couldn’t stop wouldn’t stop.
– 1 1/2 tsp salt
– 2 tsp cider vinegar
– 1/2 tsp mustard
– 1 tbsp brown sugar
– 1/4 cup molasses
– 1/2 cup ketchup
– pinch of pepper
We ate dinner really early so I was snack city in the evening. It started with a mango and a spoonful of Sunbutter. And then I went to a bonfire and Josh busted out some chips and chocolate for a little something we had to celebrate and I happily partook. SUMMER <3
